3 Healthy Breakfast Ideas That You Can Eat While Driving To Work!

I’ve been thinking lately about how successful people fit health and fitness into their busy, crazy lives.  We all like to think that other people have it easier.  The “grass is greener on the other side” belief is just fantasy.  We all have a lot of demands on our time and energy.  My goal with this blog is to give you some ideas with just the breakfast portion of your day.  If you are not eating breakfast, you are making yourself pre-diabetic, setting yourself up for weight gain, going to have trouble with quick thinking and will struggle with motivation and energy in your day.  Decide on one breakfast recipe that works for you and stick with that every single day.  You want to decrease the amount of decisions you make in a day.  Your brain can only make so many decisions in one day.  If you use up your brain energy for less important decisions, by the mid-afternoon, your willpower is gone.  Whatever is in the breakroom (doughnuts, cookies, etc.) looks really good and it’s on like Donkey Kong.

I eat breakfast while I’m driving to work.  Otherwise, it’s not happening.  I eat the same thing every day.  Make it simple.  Just get out the door!  So, here’s some ideas for you!

Healthy Breakfast #1

It can’t get any simpler than this!  Grab 2 hard boiled eggs and an apple. Choose water, black coffee or hot water with lemon, honey and maybe ginger.

Healthy Breakfast #2

Smoothie!  No sugar!  Focus on a protein source, fat source and fiber. Protein ideas- scoop of protein powder, cottage cheese, yogurt, liquid egg.  Fat sources- coconut oil, avocado, walnuts, peanut butter. Fiber- oatmeal, walnuts, psyllium, flaxseed, chia seeds.  There are so many combinations.  I like putting frozen cooked spinach in my smoothie also.  One extra serving of veggies in my day already done.  In fact, I hid some spinach in my 11 year old’s smoothie this morning, but don’t tell him! You can’t even taste it.

Healthy Breakfast #3

Breakfast Egg Muffins.  You can make a whole batch for the family to have.  In the bottom of each muffin tin, put some thawed frozen broccoli or spinach and some shredded cheddar cheese.  Scramble 12 eggs.  Put 1/12 of scrambled eggs in each tin.  A little salt and pepper.  Bake at 350 degrees for 25 mins or until eggs are firm.  12 little breakfasts ready to grab and go!
